Njamito, our meal in a bottle, is an innovative product – the first in its category to use HPP technology to extend shelf life. The fruit and vegetable components of the product are subjected to high pressure, rather than high temperature, which results in minimal sensory loss and nutrient degradation. This technique represents the latest advancement in preserving the natural characteristics of food and is mainly applied to cold-pressed fruit juices and smoothies.
Since Njamito has a much more complex formulation, which includes pea protein, nuts, and cereals, our R&D team needed to solve two significant challenges. The first challenge was ensuring a smooth mouthfeel of pea protein, without its otherwise sandy and chalky texture. We achieved this by combining it with oats under a specially developed thermal process. The second challenge was ensuring the stability of the end product in the acidic environment of fruits and vegetables after being exposed to high pressure. We resolved this with a specialized mixing protocol. We are now ready to share all this knowledge with the rest of the food industry.
